Started the morning off by having labs drawn. This time around University of Washington said since my labs were stable I could go two week before my next lab draw. That will be nice. It only took three pokes to fill up three test tubes with blood. Ha!
Afterwards I had a few errands to run. Needed to get more dog food and hip pills for Maui, along with a few other things. After I finished running errands for some strange reason I was starving. It hit me all of sudden, it was the most bizarre feeling I’ve ever had! So I was headed back down Stewart Parkway and noticed we now have a Jimmy Johns. I thought to myself oh man a turkey lettuce wrap sounds so good right about now. So I pulled in, parked, went inside and was greeted by a friendly staff. Looked over the menu, but a turkey lettuce wrap was still calling my name. So that is what I ordered. I watched them prepare it and it looked really good! Once my wrap was finished I headed back out to my car to eat. There was a lot of people inside a small space and I was a little nervous taking my mask off. As soon as I got in my car, I checked my blood sugar, and then it hit me like a ton of bricks. After transplant I have to be very careful eating deli meats. I cannot eat any type of lunch meat that has been sliced by a meat slicer and that is what they use in at Jimmy Johns. If I am going to eat deli meat it first has to be frozen, heated up to 120 degrees and then it’s safe for me to eat. All kinds of bacteria can grow in deli meat, and could cause my new lungs to go into rejection and that is the last thing I want to happen! I felt like such a dumb-dumb for totally forgetting, but I am extremely grateful I finally realized it before I ate the wrap. It just isn’t worth the risk! I didn’t want to throw it away, so I called my mom and to see if she wanted a lettuce wrap for lunch, and she said “sure!” So everything worked out just fine.
I ended up meeting Emily and her girls at McDonalds on Stewart Parkway. Her kids played on the play structure while we sat and visited. We finally had to say goodbye tomorrow. She will be in Roseburg until Friday, but I am leaving town tomorrow. It is always hard to say goodbye to Emily, she is an amazing friend! Although this time around it was a little different. This time when we said “goodbye” we both knew in our hearts we will see each other again very soon! It’s not like our other goodbyes in the past. I don’t consider her a friend I consider her as a sister. She has been there every step of the way and I cannot thank her enough for all her love and support! Travel safe Emily, I am so glad I got to spend time with you and your kiddos! Also thank you for letting me experience what is like to chase kids around in the backyard! Most definitely cross that off my bucket list! It’s the little things in life that mean the most! Travel safe my friend!
This evening I had a very nice dinner with Jeanne & Marty Shellberg, and my parents. We all really truly enjoyed each others company. Our conversations contained a wide variety of topics. Was super nice to spend some one on one time with them! Doesn’t happen very often! When we get together we always seem to pick up right where we left off from the last time. Thank you Marty and Jeanne for a wonderful evening! Oh and my parents too! 🙂
Well today was another busy day for this girl. I’m not going to lie these new breathers and my body are beyond ready for bed! Hope everyone had a great Wednesday! Cheers
